You can speak to Mumble in whatever language comes out, and switch mid-sentence. The AI Note Language setting is about the other end: the language the written note comes back in.

Set it

Open Settings > AI Note Language and tick one or more languages. Leave Auto Detect on to have the note written in the language you spoke.
